The study, “Metabolomics and transcriptomic profiles reveal membrane lipid metabolism as a key factor in sliced taro browning,” investigates the browning process in sliced taro during refrigeration.
Through a comprehensive analysis using plant wide-targeted metabolomics and transcriptomics, the research unravels the underlying mechanisms of browning in freshly-cut taro. The findings not only enhance our understanding of browning development in food products but also offer valuable insights for future research and potential strategies to prevent sliced taro browning under refrigeration conditions.
